Indigo Deli has a new meat cute situation in 2018 and you get to reap the benefits.
An organic, free-range farm now supplies black fowl to the restaurant, under chef Kedar Bobde's watchful eye. Originally found in the jungles of Madhya Pradesh and Chattisgarh, chef Bobde uses this to make black fowl and vegetable stew.
Look out for this fragrant dish during your next Indigo Deli visit (all outposts). Chef Bobde believes that as a chef it is his responsibility to promote native products. "Indian produce has to take centre stage and for me 2018 is all about celebrating the county’s indigenous resources."
Also, black chicken is known to have higher nutritional value and is rich in protein, low in fat and cholesterol.
