We know how much you’re longing for an Italian summer, so we’re taking you to Tuscany this week - well, at least your tastebuds.
Say hello to the iconic chef Cristian Borchi, chef-owner of the restaurants Locanda L’Antica Porta di Levante and Passaquai in Tuscany, who is in-residence at Sorrentina by Foodhall from May 8-9, 2019, for a series of dinners featuring classic Italian dishes.
Curated in parallel with resident Chef Aabhas Mehrotra, this dinner will treat you to a traditional Italian meal starting with a platter of pre-dinner appetisers including exquisite cheese, olives, Parma ham wrapped melons, zucchini guacamole and house breads.
Next up is antipasti such as Tuscan-Style Chicken Liver Roulade or Tuscan-Style Chickpea Roulade, served with saffron bread and truffle-scented walnuts (truffles flown in by the star chef himself); Tortello Casentinese, a filled pasta, pan-seared and served with Carrettiera (spicy tomato) sauce; and filled Banana Chilies with ricotta (non-vegetarians can enjoy the same dish with squid).
Now for our favourite primi (or pasta) course which offers Pasta e Fagioli for the vegetarians, with cannelloni beans, red onions and sage; or Pecorino Ravioli for the non-vegetarians, with scallops, barlotti beans and pecorino cheese.
Save room for Secondi (main) course of Porchetta, pork roulade with chicken breast stuffing, Salmoriglio (Sicilian) sauce and jus; or Sflogliatelle di Verdure (Filled flaky pastry with vegtables), with summer vegetables and mozzarella. An array of side dishes is also available, such as sauteed barley; rustic potatoes and a summer salad.
A Palate Cleanser of refreshing Orangecello Sorbet (yum!) will be followed by a sweet ending to the meal with Dolce such as Italian ‘Peach Cookies,’ peach-shaped biscuits, chocolate custard, and Alkermes liqueur; and Chestnut Cake, served with fresh chestnuts and Florentine cream.
