Wear your best fascinator for the thorough breads that will be lining up at Toast & Tonic’s gourmet burger festival.

Stretching from November 2 to 12, Between The Buns promises nine burger interpretations, highly inspired by all things local and packed with patties made from

mushroom, pork, lamb, tofu, chicken, fish, crab.

Like all its other innovations, the kitchen here hopes to use this festival as a platform to champion Indian ingredients in non-traditional ways. Their grocery list for instance, includes Khasi style black sesame pork, soft shell crabs from Bhimavaram, locally made cheese sourced from across the country, Bangalore ham, plus pickles, spreads and sauces inspired and interpreted from Indian flavours.

Vegetarians can choose from the tofu burger, with a tofu and sweet potato patty, bean sprouts,lettuce, tomatoes, black bean aioli in a multi-grain bun; Shrooms with pulled oysters mushrooms, button mushrooms, mushroom chips, tomato chilli spread, brie, cucumber and radish slaw in a house-made ciabatta bun; or Go Vegan, a wholesome burger made with black rice sourced from Coorg, tofu, pickled leeks, radish, tomato aioli and multi-grain buns.

Meat eaters, enter with a singular purpose: to chomp on the North Eastern Star loaded withKhasi style black sesame pork, bamboo shoots,purple cabbage slaw, perilla seeds. Meeker meat eaters can order the chicken burger where crisp chicken strips are coated with poha, and served with pickled roasted red peppers, Sriracha aioli, iceberg lettuce.

Other options include a lamb burger with a harissa spread, balsamic onions, sesame garlic yogurt mint in a freshly baked brioche bun or the intense Standard, starring a juicy chargrilled beef patty, broccoli fondue and Bangalore ham. For your pescatarian pleasure, you can also swim alongside the fish burger filled withcrispbatter fried snapper or the version showcasing soft shell crab and avocado.

No matter which burger you get, they’re all served with homemade slaw and a choice of fries - sweet potato, potato wedges, tapioca chips and shoestring fries.
